Whooopieeeeee


Today I made Lemon Whoopie Pies. They are so good, I can hear the mmmm's and yummies coming from the kitchen (my guniea pigs mum and her friend Sharon). They have a delicious lemon cream cheese filling .

Beautiful Beautiful Rain




After weeks and weeks without rain I woke up this morning to the gentle pitter patter of raindrops on the roof, hopefully it will hang around for the next couple of days.

Cupcakes In Cupcake Cups

Egg Cupcakes


How cute are these. This is the first time I have baked cupcakes in something other than papers. They have an orange yolk filling and a fluffy chicken topper.

Cookies and Cream recipe

Base

1 packet plain chocolate cookies, crushed
175g unsalted butter

Filling

3 tsp gelatine
1/4 cup cold water
1 packet cream cheese, softened
2 tsp vanilla essence
1/2 cup castor sugar
300ml thickened cream, whipped
100g white chocolate melted
150g cream filled chocolate sandwich cookies, roughly chopped

Grease a 20cm x 30cm baking tin and line the base and two long sides with baking paper.

Process cookies until finely crushed and then add the melted butter, mix to combine and press evenly into prepared tin, refrigerate.

To make the filling, sprinkle gelatine over water in a small heatproof jug and stand in a pot of simmering water, stir until dissolved and then allow to cool slightly.

Beat cream cheese, essence and sugar until smooth. Beat in gelatine and then fold in whipped cream, cool melted white chocolate and crushed cookies.

Spread filling into base and refrigerate until set. This will take a couple of hours.

To decorate melt 75g dark chocolate and 25g butter, mix together and drizzle over slice.

I have been dying to try out this recipe for ages now (we use to sell it at Jilly's), I would say it is probably my favourite. So smooth and creamy and easy to make, I'll post the recipe soon but right now I am off to eat some.

My First Quilt



My mums love for quilting had to rub off on me sometime (she's made a successful business out of it and made well over 100 of them). I made this quilt about 5 years ago and like most quilters it is still unfinished because I found another one to do. But for my first attempt I think it is pretty good. It was made out of flannel sheets.

Cupcake Aprons


This yummy collection of fabrics will be made into cupcake aprons that will be for sale at my stall at the Cabarlah Markets. They will have a pocket on the front made out of cupcake print fabric.

Stand Off


There is definatley no love lost between my cat Ratty and my sisters cat Willis. The stand off today proves it.

A Lazy Sunday



I started the day with a much needed sleep in and then my sister and I were off to the markets to find the perfect spot for my stall there next month. After that we went to visit mum at the Quilters Angel patchwork shop at the Village Green, she was busy so we didn't stay long but you can't go there and not get some yummy choccies from the Chocolate Cottage Cafe. On our way home we decided to go to the Meringandan Pub for lunch, the best pub with the best food which is about 500 metres from our house (even better). We got there at 12 and and had eaten by 12.30, the meals are huge so I won't need dinner tonight. When my sister comes home (she lives in Brisbane) she brings her cat Willis. He has his own little house under ours that dad built for him so when we got home from the pub we took him out on his lead and lay on the grass for about an hour soaking up the sun. Now I'm off to watch the footy.

Lemon Tart


Remember the Lemon tart I told you about, well I finally got around to making another one. It tastes just as good and this time I actually got to take photos before it all disappeared.

Now if only he knew how to iron!


I don't share my batter with anyone ( a story about my love for cake batter)!

This is going back a few years now, I may have been 10 or 11 but I rememebr one day I was at home with mum and she had just made a chocolate cake and had promised me the bowl at the end. After she was finished she gave me the bowl and I sat myself on the front steps ready to indulge. About a minute later my big brother came and sat beside me and demanded that he have some too. After a few minutes of this i finally caved and said "fine have it", turned the bowl upside down and put it on his head and walked away with a smile. He never asked again.

Cat Gone Wild






This is Norman who i thought was fast asleep in the sun on a very chilly morning. He looked so cute so i gave him a pat and when i walked away i dropped a hair tie i had in my hand. Well he heard it hit the floor then CAT GONE WILD. He leapt and slid around the room chasing it like it was a mouse until finally after about 10 minutes he was all tuckered out again and went back to sleep on his pillow case in the sun.

Lonely Cupcake


I had some buttercream left over so i cut the top off this cupcake iced it with blue, put the top back on then iced with pink buttercream. There is something about this picture that i just love.

The first pic a neopolitan cupcake yet to be iced followed by the iced cupcakes then the irrisistable rocky road cupcakes and last the cinnamon sugar jam doughnut cupcakes. I never got around to making the lemon cupcakes, maybe next time.

Cupcake Day

I'm off to the grocery store this morning to get the stuff I need to make my cupcakes. Rocky Road, Neopolitan, Jam Doughnut and Lemon are on the menu today. I will post pics when i am done. I might even whip up a Lemon Tart which I have been craving since I made one a few weeks ago.

Crazy Chooks #2


I intended to use these little fluffy chickens on some cupcakes i was going to make for easter but because i was making a birthday cake for a co worker i never got around to it. I am sure I will find a use for them. Bevy chook was a little too curious of them and pecked one of their beaks off.

Cupcake Aprons


My mum made me this cupcake apron a few months ago when i started doing some baking for Jilly's Cafe. It is a bit faded now and has a few stains but i wear it every time a bake. I will also be selling aprons like this one and other designs at the Cabarlah Country Markets the last weekend in June.

Cupcake Cookie Cutters


I bought these cookie cutters as a set from House the other day. You kind of have to use your imagination to see what they are going to look like iced but when I make some I will be sure to post some pics.

Surprise from my sister!



After getting home at midnight from a very busy night at work my sister surprised me with these goodies. A cupcake box which contained a cupcake recipe book, 100 printed cupcakes cases, two icing nozzles, 5 icing stencils and a piping bag as well as another cupcake recipe book to add to my collection.

Memo Boards


I made these gorgeous memo boards about a year ago and have had all 3 hanging in my bedroom. 2 of them i havn't used but that's ok because look good on the wall just as they are. They were made out cork boards with the fabric and ribbons stapled onto the back with a staple gun.

Roses Gifts and Gourmet

I was strolling through town yesterday and came across a brand new shop in Margaret Street called Roses Gifts and Gourmet. They had some beautiful gifts out the front with a small cafe out the back. Unfortunatley because they have only just opened they didn't have any menu's but I did spy some beautiful cakes on display so i will have to check back soon and see what else they have.
